Auricchio Gorgonzola DOP Nero Piccantis one of the world’s oldest blue-veined cheeses and is made with uncooked whole cow’s milk and speckled with a homogeneous distribution of blue coloured veins. During the aging process metal rods are quickly inserted and removed, creating air channels that allow the mold spores to grow causing its characteristic veining.
