Auricchio Ricotta Salata is a rennet free cheese. Produced in Lazio and Sardinia where free range sheeps are raised. It is rindless and made from sheep’s milk, which is pressed, salted and dried variation of Ricotta cheese.

Aged: At least 90 days
Texture: Firm and crumbly

Flavour: Mild and salty
Aroma: Pungent
How to use: Slicing, crumbling and grating
Pairings: Walnuts, endive and radicchio and with a good white wine like Sauvignon, Vermention, Pinot Grigio, sparkling wine, Prosecco and red wine Pinot Noir and Valpollcella.
